Ratatouille Recipe

Ratatouille is traditionally a Provencal French vegetable stew, named from the term 'touiller' which means, 'stir it up'. A delicious dish made up from fresh vegetables in a smooth roasted pepper and tomato sauce.

The recipe is not only delicious and healthy but is great for serving at the table and sharing with friends and family. The dish is a great accompaniment to fish and meat or can be served on it own with rice, pasta or fresh bread as a tasty alternative.

The food preparation of this recipe is simple and easy to achieve, with the aid of a food processor, it will make it even easier. I used the KitchenAid 1.7 litre Food Processor to slice the vegetables and mix the smooth sauce.

Ingredients

When selecting the fresh ingredients for this recipe try to choose courgettes, tomatoes and the aubergine roughly the same width, so that when the vegetable slices are arranged in the casserole dish, the final presentation of the dish will be a real crowd pleaser.

This Ratatouille dish is perfect for cooking in a casserole dish. I used the Le Creuset 18cm Soleil Cast Iron Casserole Dish, which is part of the Le Creuset Freestyle range and the Le Creuset 25cm Cast Iron Round Grill for the flatbread.

For the Sauce

2 Sweet peppers

1 Tin plum tomatoes

1 White onion

2 Garlic cloves chopped

1 tbsp Olive oil

Salt & pepper

 

Other Ingredients

2 Courgettes

2 Medium tomatoes

1 Aubergine

Dressing Ingredients

1 Handful of fresh basil

1 Garlic clove

Drizzle of olive oil

Salt & pepper

Making the Sauce

1. Roast the peppers whole in the oven for 30 minutes at 180°C. Allow to cool.

2. Whilst cooling, chop the onion, garlic and cook in the oil for a few minutes until softened.

3. Peel, remove stalk and chop the peppers and add to the other ingredients with the tomatoes, salt and pepper.

4. Cook for approx 10 minutes until softened.

5. Place the cooked ingredients in the food processor and pulse gently until smooth.

6. Pour the sauce into the bottom of a casserole dish.

Preparing the Ratatouille

1. Slice the courgette, aubergine and tomatoes into even discs and place alternating on top of the sauce in a circular pattern.

2. Mix the garlic and basil with a splash of oil in the food processor and drizzle onto the ratatouille.

3. Cover and cook for 30 minutes at 180°C. Serve immediately.
